2 baguettes, cut into 24 slices
1 cup blue cheese
2 cloves garlic, pressed
2 tbsp balsamic vinegar
1-2 green onions, minced
several fresh basil leaves, chopped, about ¼ cup
1 cup chopped tomato (Roma)
Salt & Pepper to taste
1 small beef filet or other tender cut, sliced into ½" pieces, or about 1 cup chopped leftover steak
Meat seasoning of choice
1 tbsp butter
Brush each slice of bread with oil and grill until browned and crispy then set aside.
In bowl toss tomatoes, garlic , basil and balsamic vinegar
Add salt and pepper.
Season steak pieces and quickly sear in butter until desired doneness.
Smear each bread slice with cheese
Add a spoonful of tomato mixture
Top with a slice of steak
Garnish with basil
